You’ve got to appreciate a vegan, gluten-free noodle soup that is both Non-Gmo, and super affordable! But how does it taste? Delicious!
This noodle confection I found at Brooklyn Market in Bay Ridge, though with the many varying grocers around the NYC area, I’m sure it can be found other places too.
I enjoy a good homemade meal as much as anyone else, but once in a while I simply don’t have the energy to come home after a long day of traveling and work to pull out pots and pans and prep produce for cooking something from scratch. Simultaneously, I don’t necessarily want to revert to fast food (i.e. taco bell bean burritos or vegan GF pizza, which can be expensive) every time I don’t feel like making food. This is a nice middle ground because it was inexpensive, easy to pair with your choice of protein (add beans into the soup, pair with edamame, eat an apple and peanut butter for a follow-up dessert… VEGANISM IS FILLED WITH CHOICES!) and at a few bucks per cup, this in no way breaks the bank. This soup brand offered few different flavor varieties, but I enjoy spicy anything, hence starting with this.
Another thing I like about this soup is that the nutritional content is pretty much intact with my personal preferences of not going heavy on dense carbs (hello bean/potato/rice noodles), nor allotting more than 33% DV sodium per dish I eat (if you eat 3 meals a day, 33% DV sodium per meal give or take, though with intermittent fasting I typically eat only twice daily), as many pre-packaged foods (especially things like ramen) can come with WAY more salt than is necessary or healthy for consumption, even on an occasional snacking basis.
I am a fancy girl, so I made myself a little snack tray and set up an epsom salt bath to sit in while I ate my noodles. For density (i.e. feeling “full”… sated, better yet), I have no complaints. This was actually a little more filling than I would’ve given it credit for. The flavor? Unique, and just enough heat to give it character without being overwhelming for someone with a softer preference for spicy foods. All in all, well done Crystal Noodle!
I’ll certainly have to go back next trip and try out some of the other flavors. Nothing like taking an easy night in with a good cup of easy-to-make soup. 🙂
