Pizza, right?
This couldn’t be any simpler… unless you ordered delivery.
Or bought a frozen pizza at the store and popped it in the oven.
But still!
This is a no-brainer, low calorie, and easy for pairing any leftover produce odds and ends you may be trying to use up that are leftover from salad fixings, or dinner night side dishes.
This is but one combination. Obviously if you’ve read previous posts pertaining to cooking, you’ll know that I always support marching to the beat of your own vegan drum! Try new things out. You may be pleasantly surprised in experiencing a new favorite.
Also, this is without cheese (duh), but feel free to put some on yours if you like.
Easy Cheese-less Pizza
Just what it says. Cooking pizza at home has never been more fun! Toppings are subject to chef's discretion; sometimes if you get a handful of mini personal-size crusts, this can be a fun family activity (especially for kids) or something to do at a small dinner party so guests can custom create their pizza.
Ingredients
- 1 pizza crust
- 1 jar pizza sauce
- 1 package baby bella mushrooms (pre-washed and chopped)
- 1 jar artichoke hearts
- 1/2 cup roasted red peppers
- fresh basil
- roasted garlic cloves
Instructions

Preheat your oven to the specifications of the crust YOU picked out.
Open your crust, spread an appropriate amount of pizza sauce around making sure not to over-saturate, lest your crust get soggy. -
Pile on toppings any way you choose, as few or as many as you like. Picture as a loose reference only, displaying my pizza utilizing leftovers and some fridge staples.

Whether adding vegan cheese or leaving cheese off, I like to add some spices to my pizza for extra flavor, usually -- black pepper, garlic powder, oregano, and basil. In this instance I have fresh basil, but I love basil so I didn't mind adding a little more.

Once the oven is preheated, toss your pizza in, set the timer, and take out the pizza when the timer goes off.
Allow your pizza to cool before cutting it! This allows the sauce and toppings to "settle", especially if not using cheese as a binding agent.
And there it is. Easy recipe for a pie, cheese or no cheese. Any night is a good night for pizza, in my humble opinion.
