Who doesn’t love a healthy, easy recipe that once made will leave behind goodies to last a few days? These no-bake cookies are easy to whip up, great for protein and fiber to keep you full, and contain a little sweetness for those with a sweet tooth.
Wheat-Free No-Bake Protein Cookies
Great for a breakfast on-the-go for a boost of energy, or afternoon pick-me-up to power through a second wind.
Ingredients
- 5 tbsp crunchy peanut butter
- 2 serving scoops vanilla plant-based protein powder
- 1/2 cup raw cacao nibs
- 2 cups raw oats
- 1/2 cup chia seeds
- 3/4 cup agave syrup
- 1/2 cup unsweetened shredded coconut optional
- cinnamon to taste
Instructions

Mix all ingredients together in a cooking pan (I prefer my wok -- easy stirring and no whipping anything over the edge).

Turn heat to medium low, and allow the peanut butter to melt and blend with the agave syrup until it creates a fluid base in which to blend the dry ingredients.

After all the ingredients are thoroughly melted together and stirred, ready a piece of wax paper atop a cookie sheet on which to drop the cookie balls for cooling. Use a regular teaspoon or soup spoon to formulate an easy-to-grab cookie ball and plop it onto the wax sheet, about an inch apart each.

Slide the cookie tray with the cookies into the fridge, allow it to cool and coagulate for at least 3-4 hours. After that, place leftover cookies into a ziploc bag or airtight container in fridge for keeping. Enjoy!
