A little chocolate, a little fruit, a whole lot of tasty!
Some of my favorite vegan treats are found in niche markets or epicurean grocers not always readily available in all demographic areas. That’s why I often find myself utilizing the perks of my wonderful Amazon Prime membership and getting that free 2-day shipping delivery right to my door — no fuss, no muss, and no excuses not to eat a healthy vegan meal or snack every time.
For the specific brand of DELICIOUS macaroons I used, I found they also offer other flavors similarly on Amazon. Here’s the one Dark Cacao version I used in this recipe — great iron, low fat, full flavor!

- Great source of plant-based fats.As a last note, if you find yourself in need of sharper knives (blunt just doesn’t CUT IT — ha!), don’t buy new knives!! As many of us in the plant-based kitchen know, knives are prone to become dull after so many uses. All this means is doing occasional sharpening. I’ve done the groundwork for you and found a SUPER cheap knife sharpener (for most knives, not top-of-the-line culinary specialty knives, mind you) that you can check out here if you want to buy this handy life saver for all your cutting board needs.
Pacific Fruit Salad
Ingredients
- 2 medium gala apples chopped
- 1 cup purple grapes half-sliced
- 1 cup strawberries thinly sliced
- 1 cup Emmy's Organic Dark Cacao macaroons
- 1 container vanilla yogurt (Silk, or SoDelicious brand)
Instructions

First wash all fruit to prep. Get a mixing bowl, and add in all ingredients as prepped.

Chop up the apples, strawberries, and grapes. Toss into mixing bowl.

Lastly add the crumbled macaroons, and mix PRIOR to adding yogurt (or else the shreds get clumped into the yogurt and don't blend as well).

Lastly empty the yogurt over the entire fruit/macaroon mixture, and blend well using a mixing spoon.
